BPU is breading pick-up expressed as a decimal. Example: 40% BPU = 0.40.

  • BPU (breading pick-up). The percent weight of coating relative to the raw peeled shrimp entering the breader. 40% BPU means every 1.0 kg of shrimp gets 0.40 kg of coating. Finished deglazed weight = shrimp × (1 + BPU).
  • Glaze. An ice layer applied after freezing to protect the product. It’s not edible yield and shouldn’t count toward net weight. If a quote includes glaze in the price or carton weight, strip it out before comparing.

What’s the difference between glaze and breading, and which one counts toward net shrimp content?

Glaze is external protective ice. It should be excluded from net weight and yield. Breading is edible coating that remains after cooking. But for cost normalization we strip it out too. Net shrimp content is only the peeled shrimp meat. That’s why we multiply by (1 + BPU) to get back to shrimp-only cost.

How much breading is typically lost during frying, and how should I factor that into yield?

Assume 26/30 refers to the raw PDTO shrimp entering the breader. Average raw piece weight ≈ 453.6 g ÷ 28 ≈ 16.2 g.

  • With 40% BPU, finished piece ≈ 16.2 × 1.40 = 22.7 g.
  • Pieces per kg finished ≈ 1000 ÷ 22.7 ≈ 44 pieces.

To get price per kg net shrimp, still use the same formula: Price_net_shrimp = Price_deglazed × (1 + BPU). Piece counts are great for ops, but they don’t replace BPU math for costing.

Are prefried breaded shrimp quotes directly comparable to raw breaded, or do I need a different formula?

You can use the same normalization if the BPU is stated on a deglazed finished basis post-fry. Ask your supplier to confirm whether BPU is measured pre- or post-par-fry. Buyers often chase a lower per-kg price on 31/40, then wonder why plate coverage suffers. Here’s a quick lens to keep you honest at 40% BPU and 6% glaze:

  • 26/30 raw. Net shrimp per finished piece ≈ 16.2 g. Net shrimp per kg finished ≈ 1000 ÷ 1.40 ÷ 1.06 ≈ 673 g/kg as packed. After deglaze: 714 g/kg.
  • 31/40 raw. Average raw ≈ 12.7 g. Net shrimp per kg finished after deglaze ≈ 1000 ÷ 1.40 ÷ 12.7 × 12.7? That’s messy mid-flow. Use the simpler approach: Price normalize with BPU, then check pieces per portion. If your portion target is 90–110 g net shrimp, you’ll likely need 4–5 pcs of 31/40 vs 3–4 pcs of 26/30 at the same BPU.
